Laura Keey, Waitrose Chilled Prepared Food Buyer, responsible fordeveloping the range, says: Earlier this year I travelled to Indiawith two expert chefs to research the countrys new style ofcontemporary cooking. Our mission was to bring back excitingrecipes to add to the range of familiar Indian dishes we alreadyknow and love. We found inspiration for the range in many placesacross Jaipur, Delhi, Hyderabad and Kolkata. From sitting on thefloor in basic roadside cafes, eating from banana leaves, to diningin the traditional palaces of maharajas - it was an education and afeast!

She says: Skilled cooks showed us new ways with recipes, spicesand traditional cooking methods. For example, in Delhi wediscovered Subz Kalonjee, a vegetable stir fry that youll find inmany of our new meal combinations. For this dish, handfuls ofvegetables are blanched and then lightly stir fried with spices, including onion seed and cumin. Our new collection offers an arrayof dishes which are new to this country and we are excited to bethe first retailer to sell this new, modern style of Indian food.
