Oven Baked Halibut in a Honey Mango & Saffron Sauce

Ingredients for the Halibut and Sauce
⬢ 4 (6 ounce) Halibut Fillets
⬢ 2 Teaspoon of Fresh Ground Ginger
⬢ 2 Teaspoon of fresh Ground Garlic
⬢ 2 Teaspoon of tomato puree
⬢ 2 Tablespoon of plum tomatoes and juices
⬢ Whole onion finely chopped.
⬢ 3 Teaspoon of Honey
⬢ 4 Teaspoon Curry Powder
⬢ Dash of Lime juice (or Lemon juice)
⬢ 100g Mango Pulp
⬢ Approx 10 Strands of Saffron (soaked in hot water 50ml)
⬢ 3 Tablespoons Olive Oil
⬢ 1/4 bunch of chopped coriander
⬢ 1/2 Teaspoon of turmeric
⬢ 150ml of water
⬢ Sea Salt for seasoning
Method
To make the marinade put 1/2t/s turmeric, 1t/s curry powder, limejuice, 1t/s ginger & garlic, 1 t/s tomato puree, 1tb/s oliveoil, some coriander then make to a paste add some sea salt in abowl. Place the halibut fillet in the mixture for 1 - 2 hourcovered and refrigerate.
When ready place fish fillets in foil and wrap up in individualparcels put on baking tray and leave in preheat oven to 150 oC for20 mins
Making the sauce use a frying pan, heat olive oil add, garlic,ginger, tomato puree, curry powder, and the onions together and letit simmer on low heat for 4
