Drink Up: Pineapple Coconut Rum Drink

Serves: 2
4 ounces white rum
5 ounces pineapple juice
1 teaspoon fresh lime juice
2 ounces canned sweet cream of coconut, such as Coco Lopez
3/4 cup crushed ice
4 pineapple wedges
4 maraschino cherries
Put all of the ingredients, except the pineapple wedges and thecherries, in a blender and blend on high speed until frothy andsmooth. Divide between 2 stemmed wine glasses. Skewer the pineapplewedges and cherries on cocktail picks and use as a garnish.
