Yes, I know peppers of all kinds (by virtue of their seeds) arebotanically classified as fruits. In common language, however,vegetable is a culinary term that identifies any herbaceousplant, whole or in part, that is eaten by humans.

Whatever you want to call them, hot peppers have come a long wayfrom the days when they could only be found stuffed into tight jarswith distilled vinegar and served as a condiment with collard andturnip greens.

Now used to flavor everything from jellies to soups, various typesof hot peppers come in a slew of sizes, shapes, flavors and degreesof heat. In fact, a new record holder, Bhut Jolokia, recentlyidentified by the renowned Chile Pepper Institute at New MexicoState University, is rated four time hotter than the Guinness WorldRecord winner, Red Savina.

In his vegetable plot on Paris Mountain, Danny Wherry is a championof hot peppers, making space in his raised beds for at least ahalf-dozen old favorites, as well as new varieties each year.
