Twice a day, but especially in the evening, the Spanishcongregate in their favourite bar for a glass of chilled sherry orwine, to chat with their friends and enjoy some tapas.
A good tapas bar is like an Aladdin's cave of food, with all mannerof dishes on display behind the counter glass.
Tapas can be as simple as a little dish of olives or a few thinslices of mature Manchego cheese or Serrano ham. There will oftenbe a large range of cooked dishes to choose from that can be servedin small tapas portions or as a racion, a meal-size portion.
Pinchos is a form of tapas that is native to the Basque country in northern Spain. Traditionally, these snacks are served onlittle pieces of bread or arranged on platters from which thecustomers help themselves. Pinchos make ideal food to serve beforea meal or with drinks. Even without the sunshine, it is nice toshare some tapas or pinchos with friends.
PINCHOS WITH ARTICHOKE AND CREAM CHEESE

For these pinchos, choose a thin baton of French bread, so theslices are not too big and the sliced artichokes fit neatly on top.Lightly toast the bread before using. Makes 12.
You will need:
12 little circular slices of French bread, toasted and buttered
Cream cheese to spread
6 artichokes hearts, tinned or bottled, drained
6 green olives, stuffed with red pimiento
Tiny leaves of fresh thyme
