Personal chef Tony Thomas of Palm Springs has some great tips foreating light, cool meals on days when you don't want to turn up theheat.

Here are some suggestions: Pre-roasted chickens from the grocery store can be used in justabout everything. Dice it up for salads, add it to beans and rice,pump up some pasta, make chicken tacos or use in a stir-fry. The foil packets of tuna taste better than canned and make a greattopping for salads, couscous or other grains.

Make chilled soups. They're simple to make (most are little morethan veggies blended with milk, broth and spices), and they won'tmake you break a sweat. Everything can be swaddled in a tortilla and called a wrap. Fromcooked meats to beans and veggies, a flour tortilla will turn yourleftovers into an easy meal. Use the grill outside as much as possible. Even pizza can be cookedon the barbecue!

Crock-Pots and pressure cookers are great alternatives to using thestove or oven.
Buy rice pre-cooked from a Chinese restaurant. It's cheap, fast andwon't raise the temperature in your kitchen at all. Here are some other great summer foods you can make at home: Cold Avocado Soup
