Local produce stocks light vegetarian borscht

This time of year is a cook's dream, with market stands bursting with local produce.

Three things that were in my market basket this weekend were beets, carrots and a lovely small red cabbage -- all ingredients that go into the making of borscht.

Borscht, which comes from Russia and Poland, is typically a hearty soup that also includes beef and sometimes pork. The version I'm providing below is a vegetarian one.

This light soup can be served hot or cold with a dollop of sour cream as a garnish. It freezes well, and the recipe doubles easily.
