Whenever people think about imports that came to Europeancivilization after its first encounter with America in the late15th century, potatoes, tomatoes and even tobacco always top thelist.
But lima beans?
Also known south of the Mason-Dixon line as "butter beans" whendried and soaked in water, and cooked with, well, butter, they maybe the Rodney Dangerfield of New World vegetables, but they'reculturally important enough to merit an American folk song.
"Just a bowl of butter beans ," one song begins. " Pass the cornbread if you please/I don't want no collard greens/AllI want is a bowl of butter beans ."

Delaware's largest vegetable crop -- more than 14,000 acres, orone-third of the country's production -- began its growing seasonin Sussex County this month. The season ends in September.
The crop is certainly big, but Emmalea Ernest has her eye onbuilding a better bean.
The University of Delaware Cooperative Extension associate isdeveloping new varieties that she believes will taste better(whew!) and grow faster and bigger.
Ernest wants to rid baby lima beans, the state's greatest-yieldingvariety, of a nasty disease, adapt it better to Delaware's weatherconditions and also make profitable the tastier varieties knows asFordhook and pole lima beans.
She is breeding and cross-breeding Fordhooks so they might bettersurvive the humid Delaware summers, and working on baby limas tohelp them resist a disease disarmingly called "downy mildew."
Tasty and plump, Fordhooks are twice the size of baby lima beans.
"Lima beans are an important crop for Delaware," said Ernest, 29."They aren't grown in very many places."
Besides the Delmarva peninsula, the beans mostly are grown inCalifornia and Tennessee.
