Chicken drumsticks with lemon and garlic
8 chicken drumsticks
2 tablespoons olive oil
2 tablespoons minced garlic
3 lemons, zested and juiced
1 teaspoon salt
1/4 teaspoon black pepper

In a small skillet over medium-low heat, combine olive oil, garlicand lemon zest. Cook until garlic begins to color, about 2 to 3minutes. Remove from heat and cool. Stir in lemon juice, salt andpepper. Place in zippered plastic bag.

Add chicken drumsticks; toss well to coat. Refrigerate and letmarinate at least one hour or up to overnight. Before cooking,remove chicken from refrigerator and let sit at room temperatureabout 20 minutes. Discard marinade.

If you're using a charcoal grill, create a two-level fire byarranging the hot coals in half of the grill area in a single layerfor moderate heat, and in the other half pile the coals two orthree deep for high heat. If you're using a gas grill with two ormore burners, create a two-level fire by adjusting the heat foreach burner; if your gas grill has only one burner, adjust the heatat the appropriate time.
