When the temperature soars, cooler cooking should prevail. Oftenour appetites lessen while thirst increases in hot weather. Takeyour cooking outdoors and serve up big salads by grilling up lotsof fresh vegetables and seasoned or marinated meat. Slice all andtoss with plenty of crisp greens in a favourite dressing. Keep itsimple.

Warm Asian Chicken & Napa Cabbage Salad
Keep the heat out of the kitchen. The main dish salad is a nicecombination of colour, texture and flavour and perfect for warmdays. Oranges provide a hit of sweetness and colour.

INGREDIENTS:
2 oranges
1 tbsp (15 mL) each: chili garlic sauce and soy sauce
1 lb (500 g) boneless, skinless chicken thighs
1 red pepper, quartered
8 cups shredded napa cabbage (Chinese cabbage), about 1 lb (500 g)
2 green onions, sliced
½ cup (125 mL) fresh coriander leaves

Dressing:
2 tbsp (30 mL) each: rice vinegar and vegetable oil
