Maine is the largest producer of lobsters in the U.S. The lobstersthat most people know about from their dinner plates are theAmerican and European clawed lobsters, Homarus Americanus andHomarus gammarus. These are cold water species that live on eithersides of the northern Atlantic Ocean.

Lobsters have not always been considered an expensive food. In 17thand 18th century America, they were so abundant in the northeastthat they were often used as fertilizer. Laws were passedforbidding people to feed servants lobster more than twice a week.

However, improvements in U.S. transportation infrastructure in the19th and 20th century brought fresh lobster to distant urban areasand its reputation as a delicacy grew. Populations of commerciallyimported lobster species are thought to be declining, andover-fishing, particularly of clawed lobsters in Europe, is takinga toll.

It is interesting to see how this wonderful, versatile food hastraveled over the years. It is such a great food that can be servedmany different ways. No matter what ethnic food or recipe, lobstercan make a delicious dish for any occasion, even breakfast.
