Cayenne pepper to taste

140 g anchovy essence

I kg of peeled brown shrimps

Salt and pepper

Put softened butter in the bowl, add the lemon juice, mace, cayennepepper and anchovy essence and simmer on a low heat for 2-3 minutesto infuse the spices. Remove from the heat and cool the mixtureuntil it is just warm. Add the shrimps and stir well, then seasonwith salt and pepper.

Simple sausage and beans

Ingredients : 1 cup dried haricot beans; 2ft pork sausage; 1/2 cup choppedfatty bacon; lard or oil.

Boil beans, with ample water, for 3 hrs or until tender but stillfirm.

Fry chopped bacon in a little oil or lard then add beans and fryfor five minutes, tossing not stirring.

Dress beans with a little olive oil and salt/vinegar to taste.

Fry sausage then serve with beans and (optional) mustard or garlicmayonaise). Serves 2.
