Vegetable Cheese Strata

In a large skillet over low heat, cook the onions and mushrooms in the oil until the onions are softened. Add the red peppers and zucchini. Turn heat to medium; cook, stirring, for 10-15 minutes, until the peppers are softened. Season well with salt and pepper. Add the parsley.

Brush a 4-quart casserole dish with oil. Arrange half of the bread cubes in the dish and spread half the vegetables over the bread. Sprinkle on half of each of the cheeses. Layer with remaining bread, vegetables and cheeses.

In a bowl, whisk together the eggs, milk, mustard and Tabasco. Season with salt and pepper. Pour the custard over the layers of bread, vegetables and cheese. Cover and refrigerate overnight.

Preheat the oven to 350 degrees. Let strata stand at room temperature for 15 minutes. Bake for 50-60 minutes, or until it is puffed, golden brown and cooked through.
