A recipe that you can let children prepare with very little supervision

The first featured dessert is Strawberry Whipped Sensation. It isreally delicious. Be certain to allow enough time for this to setin the freezer. If you don't, you will will be eating a sweet, coldsoup.

The No Bake Cheesecake is really a no-brainer. This light-tastingdessert is just the ticket for sweet summer eating.

If you prefer to simplify and serve this "pie" style, purchase twoprepared graham cracker pie shells. Split the recipe in two. Thisis so simple that you may find you make it often.

Purchase neufchatel cheese right next to the cream cheese. All itis, really, is cream cheese that has less fat. The first time Iwent to buy this, I had no idea what it was. Duh!

Neopolitan Parfaits are truly a recipe that you can let yourchildren prepare with very little supervision. Let the kids put adollop of pudding in the bottom of a dish, cover it with slicedstrawberries, and add another dollop of pudding. Top it off with alittle whipped cream and a strawberry.

It will be a dessert of which your children will be proud.

Don't let "strawberry season" pass you by without making at leastone of these recipes. You will be glad that you did.

Strawberry Whipped Sensation

4 cups fresh strawberries, divided

1 14 oz. can sweetened condensed milk

1/4 cup lemon juice

1 8 oz. tub whipped topping, thawed, divided

1 TB butter, melted

SHAPE foil onto outside of 8x4 inch loaf pan. Line inside of thepan with shaped foil, with ends extending over sides of pan.

MASH 2 cups of the strawberries in large bowl. Stir in condensedmilk and juice.

STIR 2 cups of the whipped topping into strawberry mixture. Pourinto prepared pan.

FINELY chop cookies. Combine cookies and butter. Spoon over whippedtopping mixture in pan.

COVER cookie mixture with ends of foil and gently press cookiemixture into whipped topping mixture. Freeze 6 hours or until firm.

INVERT dessert onto serving plate when ready

to serve; remove pan and foil. Spread remaining whipped toppingonto top and sides of dessert.

SLICE remaining 2 cups strawberries; arrange on dessert. Storeleftovers in freezer

Makes 12 servings.

No Bake Cheesecake

12 honey grahams, finely crushed (about 2 cups crumbs)

6 TB margarine, melted

1 cup plus 2 TB sugar, divided

4 pkg, (8 oz. each) neufchatel cheese, softened

1/2 cup strawberry preserves

2 cups fresh strawberries, chopped

1 8 oz. tub lite whipped topping, thawed

MIX graham crumbs, margarine and 1/4 cup of the sugar; press ontobottom of 13x9 inch pan. Refrigerate while preparing filling.

BEAT Neufchatel cheese and 3/4 cup of the sugar in large bowl withelectric mixer until well blended. Add preserves; mix well. Placestrawberries and remaining 2 TB sugar in small bowl; mash withfork. Stir strawberry mixture and whipped topping into cheesemixture. Spoon over crust; cover.

REFRIGERATE 4 hours or until firm. Store in refrigerator.

Makes 16 servings.

Neapolitan Parfaits

9 fresh strawberries, divided

1 Jell-O Chocolate Pudding Snack

1 Jell-O Vanilla Pudding Snack

2 TB whipped topping in a can

SLICE 7 of the strawberries

SPOON chocolate pudding evenly into 2 dessert glasses. Cover withlayers of strawberry slices and vanilla pudding.

TOP with whipped topping and remaining 2 strawberries. Serveimmediately.

Makes 2 servings. Total preparation time 5 minutes.

Substitute: Use 1 sliced banana or 1/2 cup fresh raspberriesinstead of the strawberries.
